Stem Ginger Biscuits



I’ve made a new recipe for stem ginger biscuits.  Great for anyone who has some leftover stem ginger like I did!

Make around 18-20 biscuits.


  • 8oz butter
  • 5oz caser sugar
  • 1 egg yolk
  • 10oz plain flour
  • 2 balls of stem ginger very finely chopped
  1. Cream together the butter and sugar.
  2. Beat in the yolk, then add the ginger and mix until the ginger is well dispersed.
  3. Add the flour gradually until a dough forms.
  4. Wrap the dough in cling film and chill in the fridge for 1 hour at least.
  5. Once chilled; pre heat the oven 190 degrees / gas mark 5, roll out the dough between two pieces of greaseproof paper (the dough will be sticky), then cut out the shapes you want. Place them on a baking tray lined with greaseproof paper and bake for 10-15 minutes. 
Once cooked, transfer to a wire rack to cool. 


I decided to practice some Batman icing runouts on mine.

It’s been a while since I’ve written a new post. A lot had happened in the year since my last post. Here’s a few cakes I’ve made.

Latest Creations



Baking is my passion but boy can it be stressful sometimes! I recently got asked to make a Minecraft cake 3 days before the child's birthday party. Panic ensued! But once I'd drawn out my ideas and plans it was down to work.


My brief: To make a Minecraft block cake out of vanilla sponge and 8 chocolate cupcakes to go around it with the child's name and age on top.


This was the final outcome:




The block was made up of 4 layers of sponge with jam and buttercream filling.





The characters were modelled out of icing sugar and I wanted to make them completely edible so I couldn't use supporting wire of wooden sticks.





A few days later I was asked to make another birthday cake. This time a much simpler Mario cake.




This was a simple sponge cake. I made templates for the decorations and cut each part out by hand.
